Tinto Fino (90%), Cabernet Sauvignon (6%) and Merlot (4%).

Expressive, open, powerful and delicate at the same time. With present and subtle tannins, with recognizable character and balanced.

Pago de Carraovejas is made with grapes grown in our vineyards in the Botijas River valley, planted between 1988 and 2011. Our work in the last 30 years has been directed towards an "à la carte viticulture": we have paid maximum attention to the microclimate conditions, acting in detail, and to the maintenance of the soils by means of vegetal covers, which already develop spontaneously. All this leads us to observe a development of the ecosystem of the valley, which we scrupulously respect, using organic fertilizer and sulfur as the sole basis of our viticulture.

Depending on the plot of origin and the time of entry, the grapes can be deposited in cold chambers to avoid oxidation and preserve aromas. We carry out a double selection: first in the vineyard, where we select bunches and, then, in the winery, discarding the grape grains that do not meet the appropriate conditions, through a selection table.
The grape enters the cellar and moves, always taking advantage of gravity. The filling of the tanks is slow and smooth. Depending on the characteristics that we detect in the tasting of grapes, we ferment in stainless steel tanks or French oak vats. For years we have been working with our own yeast, from our vineyard and isolated by our team.

The wines will remain in barrels for around 12 months. It is bottled and capped with selected natural cork stopper. We do not like to condition the tasting of Pago de Carraovejas, but we do share the sensations that this Pago de Carraovejas has caused us. As we have been tasting the wines, we have had a double sensation of volume and softness of tannins, as well as a remarkable aging potential and floral nuances that accompany the fruit.
